Hot Beets + Cold Chèvre

I know there are folks out there who hate beets. To you, I apologize for this post. Actually, no. I feel sorry for you because I LOVE beets. Hot steamed beets with a dribble of good olive oil and a splash of balsamic vinegar topped with a generous garnish of cold, plain chèvre is the BEST. I could eat it every day, and I’d never get tired of it. Ahhh…delicious!

This is the kind of food that would be impressive as a fancy salad starter for your next gathering of friends or family. You could even sprinkle a little minced parsley over the top for a little color, too.

Ooooh.. me too. I am into topping beets with orange juice + balsalmic vinegar mixture.. boiled for a little bit first, reduced perhaps is the appropriate cooking term for that? I am jealous of your copious fresh goat cheese!

Having a bunch of goat cheese around at all times is pretty fantastic. I’ve made a rule for myself that I have to eat it with something any time I’m at home for lunch. The orange juice concoction sounds delicious. I’ll have to try it.

Hmmmm…you’re making me rethink my hesitation on fresh beets…could I be missing out on something supper yummy?
