I know there are folks out there who hate beets. To you, I apologize for this post. Actually, no. I feel sorry for you because I LOVE beets. Hot steamed beets with a dribble of good olive oil and a splash of balsamic vinegar topped with a generous garnish of cold, plain chèvre is the BEST. I could eat it every day, and I’d never get tired of it. Ahhh…delicious!
This is the kind of food that would be impressive as a fancy salad starter for your next gathering of friends or family. You could even sprinkle a little minced parsley over the top for a little color, too.
